Vancouver-raised Aaron Molloy has been working in restaurants since his teens and pairs his passion for food with his curiosity for life in general. Aaron has risen steadily through the culinary ranks, working at renowned resorts in Canada, before opening his own Asian fusion restaurant, Umami, in Toronto.
Before moving to Cayman, Aaron was the Executive Chef at Drift Izakaya in Rossland BC, which was designated one of the top five “most innovative new businesses” in the West Kootenay region of British Columbia.
Aaron’s interest in food production and handling has played an equally important role in his career, leading him to establish a beef company in Canada. He is also currently the owner of an organic coffee company, Keen coffee. Chef Aaron strives to only serve sustainable, and where possible, local produce.
