- 1.5lbs flour
- 1lbs 1oz granulated sugar
- 1lbs 1oz butter
- 1lbs chocolate chips
- 14oz brown sugar
- 2 large eggs
- 2 tbsp vanilla extract
- Vanilla ice cream and chocolate sauce to serve
- Fresh mint to garnish
Preheat oven to 375F. In a bowl, combine butter, sugar, brown sugar.
Add eggs one by one and mix until incorporated. Slowly add flour, mix until dough consistency.
Fold in chocolate chips and vanilla. Roll into logs approx 2 inches in diameter and wrap in cling film. Refrigerate for at least 30 minutes.
Cut into 1 inch lengths and place on a baking sheet lined with parchment paper. Bake until golden brown, approx 8 to 10 minutes.
Remove from oven and allow to cool slightly.
Place one cookie on a plate, scoop a large dollop of vanilla ice cream onto it, and drizzle with chocolate sauce.
Place another cookie on top, pressing slightly to form the ice cream sandwich.
Top with another large scoop of ice cream, drizzle again with chocolate sauce (don’t be skimpy!) and garnish with fresh mint.
