Conch and Crocodile Fritters

  • 2 1/2 pounds conch meat, medium grind
  • 1 pound crocodile/alligator meat, medium grind
  • (available at Kirk Supermarket)
  • 1/2 ounce baking powder
  • 1/4 cup Worcestershire sauce
  • 2 ounces Tabasco Hot Sauce
  • 2 ounces Pickapeppa Sauce
  • 1 1/2 cups bread crumbs
  • 1 cup all purpose flour
  • 3 whole eggs
  • 1 pound carrots, chopped finely
  • 1 pound celery, chopped finely
  • 1 pound onions, chopped finely
  • 1/4 cup minced fresh garlic
  • Salt, cracked black pepper and Cajun spices to taste
  1. Sift together the flour in a large mixing bowl,
    whip together the eggs, add all the other ingredients, mix well and season to taste.
  2. Form into fritter balls, about
    1 to 1 ½ ounces and fry until golden brown.
