Crepes with Mixed Berry Compote

  • 3 eggs
  • 1 cup of flour
  • ½ cup of milk
  • ½ cup of water
  • 3 tsp of sugar
  • Pinch salt
  • 1 tsp melted butter
  • 3 cups mixed berries
  • ½ cup water
  • Chocolate ice cream to serve

Whisk the eggs, 1 teaspoon sugar, flour, melted butter and milk together.

Heat a shallow pan, or crepe pan, with a little oil, and pour about 2 tablespoons of the mixture into the pan for each pancake.

Tip the pan so the mixture is evenly spread and cook for a couple of minutes on each side until golden.

For the compote add the remaining sugar and water in a pot and cook until the sugar is dissolved, stir in the berries, take off the heat and let cool.

On a plate, place the pancake and heap a generous serving of the compote, fold, and drizzle with some chocolate ice cream.
