- 2 cups cream
- ¼ cup sugar
- 5 egg yolks
- 1tsp salt
- 2 tsp vanilla
- 2 tbsp butter
- 4 slices of day-old brioche or sourdough
- Maple syrup or fruit compote to serve
In a medium bowl, combine the cream, sugar, egg yolks, salt, and vanilla.
Place a griddle or large sauté pan over medium-low heat. When hot, add the butter. Use four ¾ inch slices of day-old, or stale, brioche or sourdough bread.
Freshly sliced bread is fine, just place on a sheet pan and cook in a 275F degree oven to dry it out or “stale” the bread for about 15 to 20 minutes. You are not looking for any colour just slightly crisp.
Remove from oven, let bread cool and proceed. Take one slice of bread and soak for 5 seconds on each side, then cook low and slow for 5 minutes on each side until golden brown.
Repeat with the remaining slices of bread. Serve hot with butter and maple syrup or fruit compote… or both!
