Red Curry Paste

Makes 1 jar

  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander seeds
  • 4 red bird’s eye chilis, roughly chopped
  • 1 tablespoon paprika
  • 3 lemongrass stalks, roughly chopped
  • 1.5 inch piece of fresh galangal or ginger, chopped
  • 6 fresh kaffir lime leaves
  • 2 shallots, chopped
  • 5 garlic cloves, chopped
  • 2 tablespoons fish sauce
  • 2 tablespoons sunflower oil
  • 1 bunch of fresh cilantro, stalks only

In a pestle and mortar, grind the cumin and coriander seeds to a powder. Transfer to a small food processor. Add the remaining ingredients and whizz to a smooth, thick paste.
