1 quart freshly squeezed tangerine juice
1 quart sugar (or alternative sweetener such as honey or agave)
Zest of 5 tangerines
2 tablespoons juniper berries
½ teaspoon citric acid
Lightly muddle the juniper berries, then combine all the ingredients in a saucepan. Stir until sugar dissolves.
Bring mixture to a boil on medium heat. Reduce heat to low and simmer for 10 minutes. Strain out solids and leave the mixture to cool.
To serve, mix 1-2 ounces of syrup and soda water. Adjust the quantity according to the size of your glass and preferred sweetness.
