Watermelon, Tequila and Lime Popsicles

  • 1 cup sugar
  • 6 cups watermelon juice
  • 2 cups tequila
  • 3 limes, zested and juiced
  • Sugar to finish
  1. In a large saucepan over medium-high heat, simmer the sugar in 1 cup of water until dissolved, about 3-5 minutes.
  2. Remove from the heat and let cool, about 45 minutes.
  3. Add watermelon juice, tequila, lime zest and juice, stirring to combine.
  4. Pour into popsicle molds and freeze for 4 hours.
